Being prepared for guests anytime of the year, especially during the December holidays is important for me. By having a few items in the fridge always available, allows us to easily whip up some finger foods that will be enjoyed by our guests. I made this Hummus party eggs inspired by the recipe on Sabra Dips website.
I am glad I made this because everyone at home enjoyed it. This is an easy to make party finger food that will be wonderful to serve either as a snack or during a celebration.
To make this you will need...
1/3 cup + 1 Tbsp Sabra hummus
6 eggs
2 Tablespoons Olive Oil
¼ tsp freshly ground pepper
¼ tsp salt
3 teaspoons relish
Paprika for garnish
Place eggs in pot and cover with cold water. Bring to a boil over high heat. Turn off the heat and let sit for 14 minutes. Remove with a slotted spoon and run cold water over the eggs. Cool the eggs for 10 minutes, and then remove the shells. When the eggs are cool, cut in half and scoop out the yolk and reserve in a bowl.Repeat with the remaining 5 eggs.
Add hummus, olive oil, pepper, salt to the yolks either use a food processor or spatula and mix the ingredients till it is smooth.
Add the relish to the mixture, if you are using a food processor you can pulse 3-5 times to incorporate.
Put the yolk mixture in a piping bag. (Use a tall glass and fold the edges of the piping bag over the glass to make it easier to transfer the mixture.) Pipe about a teaspoon of the mixture into each of the egg white halves and sprinkle with paprika.
When mixing the egg filling I used one of the bowls from the 3 piece non-skid base mixing bowl from Trudeau, which is not only pretty but also functional in the kitchen. I find these bowls helpful when my children are helping me mix, and whisk. These bowls are microwave and dishwasher safe, and hold 1.9L, 2.8L, and 3.8L.
