I adapted Chef Matt Basile's Sabra Hummus Steak recipe below by substituting tofu instead of meat. If you are grilling tofu it needs to be enjoyed right away while it is hot. If you are using tofu, marinate it for a few hours and grill it in a preheated grilling pan as it may break when turning it.
Chef Matt Basile's Steak recipe
1 1/2 inch thick cut t-bone
1 1/2 inch thick cut t-bone
1 container roasted garlic Sabra hummus
1 tbsp Worcestershire sauce
1 tbsp apple cider vinegar
1/2 lemon juiced
1 tsp horseradish
1 tbsp finely chopped chives
Place the steak in a bowl with half the container of Sabra roasted garlic hummus and marinate for an hour. Grill on a preheated 450F grill. Sear on direct heat for 3 minutes per side then cook on low for a few minutes until cooked. Allow the steak to rest for 10 minutes before slicing.
In a bowl, mix remaining hummus, vinegar, Worcestershire sauce, and lemon juice and whisk. Slice the meat off both sides of the t-bone and then slice the steaks on a bias at 45 degree angle.
Stand the bone upright and fan the meat around it. Drizzle the Sabra sauce over the steak and reserve some on the side for dipping. Sprinkle chives and season with salt to taste.
For the tofu, I used the same method and cut 1" thick slices of firm tofu. I marinated the tofu with the hummus for a few hours in the fridge and used a preheated well oiled indoor grill pan to grill both sides of the tofu. For the sauce, I mixed all the ingredients and poured it on to the grilled tofu and served it right away.
