Yellow rice


1 1/2 cup rice
3 tbsp ghee
1/4 cup onion
1/2 tsp turmeric
few curry leaves
2" screw pine leaf known as pandan leaf rampe
2" lemon grass optional
bay leaf optional
3 cardamoms
2 cloves
2" cinnamon stick
1/2 tsp salt
1/2 cup coconut milk (3 tbsp coconut milk powder)
water

Wash and drain the rice. Heat ghee add onions fry till golden brown add all the spices saute till fragrant. Add rice saute till transparent. Add salt and coconut milk with the water. The liquid should be 1" above the rice. Bring the water to boil then simmer the rice covered for 20 minutes till the rice is cooked. Remove the whole spices if you wish before serving.

For a variation add stock water, chicken or vegetable cubes.
Can garnish the rice with fried boiled eggs cut into half vertically, fried cashews, fried raisins, fried onions and parsley. This goes to the festive rice giveaway.

I received these palm leaf plates to review on our Eid festival, which was exciting as I had so many dishes to keep on the plates and see if they hold up well. I love these and would certainly recommend it to anyone. They are friendly to the environment, sturdy and beautiful. These plates are made using Adaka palm leaves from forest floors are washed, hand stretched, flattened and heat pressed into shapes and dried in the sun.

Festive rice event

I am excited to announce a giveaway from CSN stores for the participants of the festive rice event between September 1st to September 30th. Check out the Corelle products I love using them.

The event is about festive rice because this month it is Eid-ul-fitr, festival to mark the end of Ramadan the holy month of fasting. And we give a staple food commodity like rice to those who are in need within the community known as Zakat-ul-fitr.
