This year, we planted calaloo also know as amaranth leaves in our garden. This iron and nutrient rich leaves are a healthy addition to any meal. I cooked the fresh leaves with a combination of coconut and spices and served it as a side dish with rice.

I got this recipe for Honey-Glazed Apple Cake from OntarioFarmFresh pamphlet during our visit to an apple orchard. This spiced apple cake tastes delicious, and can be served warm or at room temperature for breakfast, dessert, and snack. We enjoyed the cake without the glaze.

Easy Snacks: Chocolate Drink and Triscuit

It is always fun when snacks are delicious and easy to prepare. We enjoy making simple chocolate drinks using AMERICAN HERITAGE® finely grated chocolate drink. To make a delicious drink I simply mixed the chocolate drink powder with sugar and boiling hot water. Then added milk to our liking and served it cold.

We enjoy making refreshing, healthy beverages at home to enjoy during different times of the day. Mocktails, Punches and Shrubs book by Chef Vikas Khanna has many unique combinations of recipes to make a delicious array of beverages that everyone in the family can enjoy. The recipes include herbal infusions, teas, coffees, smoothies, slushies and more. I am glad this book has alcohol free recipes, and inspires to use a variety of different combination of ingredients that we don't always think of adding to our beverages.  

Pineapple Salsa and Giveaway

I enjoy making a variety of sweet desserts and savoury dishes using pineapple all year around. Since I can't find fresh pineapple when it is not in season, we opt for Dole canned pineapple and find that they work just like fresh pineapples for the recipes I make. I always have a can of pineapple at home, you never know when you need one. As a pineapple fan, I am excited to be partnering with Dole Canada to host a Dole Pineapple kit giveaway to celebrate International Pineapple Day this June 27th.

Indian Cuisine Diabetes Cookbook by May Abraham Fridel, the founder of the organic spice company, Passion for Spices, has more than 140 recipes that include main dishes, sides, condiments, one pot meals, flatbreads, drinks and desserts. Four pages in the book has colour photography of some of the recipes. Most of the recipes on this book are dishes I regularly make at home, and I liked how well the author explains the recipes.
