Soft Ginger Cookies

These soft and delicious cookies spiced with ginger, cinnamon, and cloves are one of our favourite cookies. It is perfect for tea time.

1 cup sugar
3/4 cup butter softened
1/4 cup fancy molasses
1 egg
2 1/4 cup all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp salt
granulated sugar to toss

Beat the sugar and butter until fluffy. Add the egg and molasses and beat it. Gradually add the flour, baking soda, salt, and spices and mix well. 

Leave the dough in the fridge for a little bit to make it easier to roll. 
Flour your hands lightly if the dough is sticking to your fingers. Roll the dough into 1 1/2 inch sized diameter balls. It can make about 60 cookies. If you make a little larger about 2" then it will make less cookies. Once the balls are made it is optional to roll it in the sugar. Place the cookie dough balls 2 inches apart on a un-greased baking sheet.

Bake for 10 to 12 minutes in a 350F preheated oven until puffy and has a light brown colour. It is usually ready at 10 minutes. The cookies will harden after it comes out of the oven, so don't keep it too long in the oven. Take it out of the oven and let it to cool on the tray for a couple of minutes. Transfer the cookies onto a wire rack to cool completely before putting it in an air-tight container.

    1. You can make 60 cookies if each of the balls are made at 1.5" diameter.
