Celebrating Nutrition Month with Salad and Giveaway

March is Nutrition Month, which reminds us to refocus on our diet and make sure we are getting the nutrients our body needs. Canada’s Food Guide recommends that we eat 5 to 10 servings of fruits and vegetables each day. Since it is more costly to eat fresh fruits when it is out of season, and some fruits like peaches are hard to find in winter we can get the nutrients we need by having canned fruit like California peaches.

Canned California cling peaches do not contain added sugar, as they are packed in water or their own light juice. Furthermore, the canning process has been proven to increase key nutrients, and a study has revealed that canned peaches are higher in antioxidants and Vitamin A, nearly four times higher in Vitamin C and 10 times higher in folate than fresh peaches.

The peaches are nutritious, delicious, convenient and versatile to be included in a number of recipes. In keeping with Nutrition Month’s theme this year: Simply Cook and Enjoy. This Tex Mex Bean, Sweet Peppers and Peach salad recipe serves 4 to 6 people is courtesy of California Cling Peach Board. 

1/2 cup Frozen corn
1 can (398ml) California Cling sliced peaches
1 can (540ml) Mixed beans
2 Sweet peppers, red and green, cut into bite- size chunks
2 Green onions, thinly sliced

Dressing 
2 tbsp Olive oil
1 tbsp vinegar
1 Large garlic clove, minced
2 tsp Chili powder
1/2 tsp Each salt and dried oregano leaves
Generous pinch Cayenne pepper
1/2 cup Chopped coriander

Thaw the corn. Drain the peaches and reserve 1 tbsp of juice. Then chop peaches into bite-size chunks and add to a large bowl along with corn, beans, peppers and green onions. 
In a small bowl, whisk reserved peach juice with oil, vinegar, garlic, chili powder, salt and oregano and cayenne. Stir into salad along with coriander. Add more salt and cayenne if needed.

  2. We live in the Fraser Valley portion of BC, and each summer my Mom and I can fresh Okanagan peaches to enjoy all winter. The very most best way every to eat them is over homemade vanilla ice cream!!

  31. I'm in BC. I can my own peaches almost every year (I've done them 9 out of the last 10 years). I also buy them sometimes if we use a lot in a year. Like this year we'll have to buy some because I just sent the last jar to work with my husband today.

  50. I live in Alberta. I always have canned peaches in the pantry. I use them to eat on their own, make into Peach Crisps, put into puddings and desserts, add to homemade ice cream and I eat them with cottage cheese.
