Brownie Cookies Made with Rodelle Gourmet Dutch-Processed Baking Cocoa

I love the smell and the taste of Rodelle Gourmet Dutch-Processed Baking Cocoa. Using good quality cocoa makes a huge impact on how delicious our baked goodies turn out. I have used other types of cocoa to make one of our favourite recipes from the Smitten Kitchen cookbook, and no one in my family has raved about these cookies as much until I baked them with Rodelle Gourmet Dutch-Processed Baking Cocoa. Using this cocoa powder gave these brownie roll out cookies a delicious flavour without an overpowering cocoa taste. I am glad Rodelle Gourmet Dutch-Processed Baking Cocoa is available at Costco stores across Canada.
The cocoa is available in 8oz and 25oz containers. It is made with 100% cocoa processed with Alkali. By alkalizing the cocoa, some of the sourness and bitterness of cocoa powder is reduced. This European Dutch-processed cocoa has rich flavor and appearance, as it contains one of the highest levels of cocoa butter on the market, ensuring superior chocolate flavor. I love the decadent rich flavour of this cocoa. In addition to the great flavor, I am glad that Rodelle's Gourmet Baking Cocoa is naturally cholesterol free, and has health benefits such as Antioxidants, Dietary Fiber, Calcium, and Vitamins like magnesium, potassium, and iron.
My children enjoyed making these brownie cookies with me. To make the cookies you will need...

3 cups flour
2/3 cup unsweetened cocoa
3/4 tsp salt
1/2 tsp baking powder
16 tbsp unsalted butter softened
1 1/2 cups sugar
2 eggs
1 tsp vanilla
Whisk flour, cocoa, salt, baking powder in a bowl. Beat the sugar and butter until fluffy in another bowl then add eggs one at a time. Mix in the vanilla and dry ingredients. Wrap the dough with a plastic and chill for 1 hour. 
Roll out the cookie dough on a floured counter, it should be 1/4" thick. Cut desired shapes and place the shapes on a parchment lined baking sheet and bake in a 350F oven about 11 minutes. 
The edges will become firm and the center will be slightly soft and puffed, as the cookies cool it will harden so don't over bake. Transfer to a wire rack and cool before storing.

  4. I am at my boyfriend's parent's house right now, and they use this. I made some brownies with it, and it is really good! I love the sound of these brownie cookies though!
