Quick Easy Dairy and Egg Free Chocolate Cake

This quick and easy chocolate cake made without milk, butter, and eggs from here is easy to bake and delicious to serve anytime. We have baked this cake many times and enjoy it topped it with a light frosting.

Dry ingredients
1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt

Wet ingredients
1 cup cool water
6 tbsp vegetable oil
1 tbsp fresh lemon juice or distilled white vinegar
1 teaspoon vanilla optional

Preheat oven to 350° F. Grease a 9-inch round cake pan or place a parchment paper on the bottom. 

Sift dry ingredients into a bowl and set aside. Combine water, oil, vinegar, and vanilla if using in another bowl. Add the liquids to bowl with the dry ingredients and gently stir until there are no lumps, this should take about 30 seconds.

Pour the batter into the prepared pan and bake for 30 minutes or until a skewer inserted in the center of the cake comes out clean. 

Cool the cake in the pan. Once the cake is completely cool, decorate with frosting, glaze, or dust with powdered sugar.

We glazed the top with a quick frosting by beating 1/2 cup icing sugar, 1 tbsp butter, 1 tbsp cocoa powder, and 1 tbsp milk. It is better to wait till the cake cools to cut it so the frosting can set. We were too eager to cut and enjoy it when I took this picture.

  3. I normally use eggs and milk in my baking but this recipe is very helpful to have at this time. Right now, we are trying to leave home as seldom as possible. Even if we run out of eggs or milk, I'll be able to make this. Thanks.

    1. I'll have to find a different frosting though; your recipe has milk. Maybe just a sprinkling of icing sugar would be good.

    2. Cheryl for the frosting I did add 1 tbsp of milk. Instead of adding the frosting you can sprinkle icing sugar or serve the cake without any frosting or icing sugar as it tastes good just on its own.
