Leeks and spring onion curry


1 tbsp oil
2 tbsp onion chopped optional
1/2 cup tomatoes chopped
1/2 tsp
ginger garlic paste
2 cups leeks or spring onions (green onions or scallion) chopped
1/4 tsp salt
1 tsp maldive fish optional
1/2 tsp chillie powder
1/4 tsp garam masala
1/4 tsp turmeric
1 tsp lemon juice to taste

Heat oil add onions and maldive fish if using then add leeks or spring onions, tomatoes, ginger garlic paste and spices. Stir fry for a few minutes then lower the cooker, cover and cook till the leeks or spring onions are soft. When it is cooked add the lemon juice and remove from heat. Serve as a side dish with rice, bread or flat bread.
