Ridge gourd (chinese okra) curry


2 cups chinese okra or ridge gourd
1 tbsp oil
1/4 tsp mustard seeds
2 tbsp onion
2 tbsp tomato
1/2 tsp maldive fish optional
1/2 tsp ginger garlic paste
1 tbsp curry leaves
1/2 tsp chillie powder
1/4 tsp turmeric
1/4 tsp garam masala
1/2 tsp salt
1 tbsp coconut milk powder

Heat oil add mustard seeds, then add onions, curry leaves, maldive fish, ginger garlic paste, tomatoes and saute. Add the okra, spices and cook uncovered in low heat till the spices blend and ridge gourd is soft. Add coconut milk powder mixed with tbsp of water and cook for a few minutes. Serve hot with rice and curries. It is covered the ridge gourd tends to let out water.
