Poppy seed crackers with sesame
We have been reading a few cookbooks during the past months that include Campfire cookbook, Sprout Right Family Food, Naturally Sweet Baking, Vegan Instant Pot cookbook, and The Prairie Table Suppers, Potlucks and Socials. We tried a few recipes from these books including the Poppy seed crackers with sesame from Campfire cookbook which I have shared on this post. Chef Nico Stanitzok and lifelong camper Viola Lex have teamed up to create more than 80 sweet and savoury camping recipes in the Campfire Cookbook. There are recipes which can be made ahead of time and others that can be cooked outdoors in the open-air while travelling and exploring. Each recipe has a symbol that tells you the best way to cook the dish, be it an open fire, grill, or camping stove. 

The authors share outdoor cooking tips, and include checklists of camping essentials and basic recipes for camping must-haves such as BBQ sauce, ketchup, and dukkah, and a fun questionnaire to help decide what kind of camper you are. Alongside traditional campfire favourites such as BBQ chicken, grilled corn on the cob, and kebab skewers, you'll find recipes for breads, grilled Camembert, pancakes, and even chocolate cakes baked inside oranges.

We enjoyed baking these Poppy seed crackers with sesame from this book.

2 1/2 cups flour plus extra for dusting
2 tbsp olive oil
pinch of salt
1/2 cup water
2 tbsp poppy seeds
1 tbsp sesame seeds
2 tbsp coarse sea salt

Using all the ingredients except the coarse sea salt by hand and knead until the dough is smooth. Wrap with plastic and leave it to rest for 30 minutes.

Line 2 baking sheets with parchment paper. Preheat the oven to 425F.

Roll the dough on a floured work surface to about 1/4 inch thickness. Slice into 1 and 1/2 inch squares with a pastry wheel. This recipe will make about 100 pieces. Prick the crackers with a fork so they don't puff up. Place the crackers on the prepared baking sheets and sprinkle the sea salt.

Put the baking sheets in the center of the oven and bake for 12 to 15 minutes until the crackers are golden brown. Take the sheets out of the oven and cool the crackers on a wire rack with the parchment paper.

Naturally Sweet Baking by Sebastian Keitel and Carolin Strothe has more than 70 low-sugar and sugar-free recipes, including healthier versions of carrot cake, muffins, gingerbread, and hot cross buns. Many of the recipes are gluten-free and dairy-free. Every recipe has a stunning photo of the finished cake or bake. 

The recipes contain little or no processed sugar, instead relying on easy-to-source sugar substitutes and natural sugar alternatives, such as honey and seasonal produce. Foraged edible flowers adorn decadent chocolate muffins and freshly picked berries peek out from between the layers of beautiful cakes. The author includes a seasonal calendar for readers to choose the best ingredients; basic recipes for pantry essentials such as apple sauce and cashew cream; and tips to elevate the look of the bakes using natural colourings.
Vegan Instant Pot cookbook, The Prairie Table Suppers, Potlucks and Socials
In the Vegan Instant Pot cookbook, author Nisha Vora offers up more than 90 nourishing vegan recipes that can be made in the Instant Pot electric cooker. She is known to share nutritious recipes on her blog RainbowPlantLife. The book includes a comprehensive guide to the Instant Pot and all its functions with recipes such as BBQ Jackfruit Tacos, Sweet Potato Bean Burgers, Blueberry Cheesecake, and many more.
The Prairie Table Suppers, Potlucks and Socials
The Prairie Table Suppers, Potlucks and Socials: Crowd-Pleasing Recipes to Bring People Together written by Karlynn Johnston blogger behind The Kitchen Magpie. Karlynn shares recipes filled with real ingredients keeping comfort in mind. The Prairie Table features more than 100 recipes from salads to vegetable dishes; home-baked breakfasts to easy main meals; crowd-pleasing appetizers to portable desserts; a chapter dedicated to the Ukrainian heritage of the prairies, and much more. The recipes are paired with photography and stories. Every recipe in this book can easily be cut in half for a smaller family meal or doubled for a large event, and there are even quick "cheater" recipes for when you are in a hurry. There are an array of cocktails and mocktails featured in the final chapter of the book, written by Karlynn's husband Mike aka Mr. Kitchen Magpie. The variety of recipes include making perogy, cinnamon buns, muffins, salads, cookies and much more.

  10. My grandchildren love to go camping and go out every chance they get. We don't camp any more but I still love to cook outside on a fire when we are on vacation. We stay in a hotel and cook our meals in picnic areas with fire pits.
