Soft Ginger Cookies

These soft and delicious cookies spiced with ginger, cinnamon, and cloves are one of our favourite cookies. It is perfect for tea time.

1 cup sugar
3/4 cup butter softened
1/4 cup fancy molasses
1 egg
2 1/4 cup all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp salt
granulated sugar to toss

Beat the sugar and butter until fluffy. Add the egg and molasses and beat it. Gradually add the flour, baking soda, salt, and spices and mix well. 

Roll the dough into 1 1/2 inch sized balls, then roll in the sugar and place it 2 inches apart on a un-greased baking sheet. Flour your hands lightly if the dough is sticking to your fingers.

Bake for 10 to 12 minutes in a 350F preheated oven until puffy and has a light brown colour. The cookies will harden after it comes out of the oven, so don't keep it too long in the oven. Take it out of the oven and let it to cool on the tray for a couple of minutes. Transfer the cookies onto a wire rack to cool completely before putting it in an air-tight container.
