Light fruit cake


6 oz butter or margarine
6 oz sugar
3 eggs
6 oz glazed cherries
2 oz cashew nuts
8 oz flour
2 tsp baking powder
2 tbsp milk

Cream butter and sugar, then add eggs one at a time and beat till fluffy.
Mix the fruits and nuts with a little flour, then add so the fruit doesn't sink to the bottom.
Mix flour with baking powder and add to the mixture alternating with milk. The batter should be thick, pour into a greased baking dish and bake at 375F for 30 minutes till a toothpick comes out clean.
