Semolina Sweets

Semolina Sweets rava ladoo
Semolina sweets are a delicious snack that that can be enjoyed any time of the day. It is easy to make. It can last for a week when left in an air tight container.

2 cups semolina or rava
1/2 to 3/4 cup sugar to taste
4 tbsp ghee
1/4 cup ground or chopped almonds or cashews
1/4 cup raisins
1/4 cup desiccated coconut
2 to 4 cardamom seeds finely ground
1/3 cup warmed milk

Heat a pan and dry roast the semolina until the raw smell is gone, and the colour changes to a light golden brown. Remove from heat and put it in to a large bowl and let it cool. Dry roast the desiccated coconut and add the semolina. Once it cools, using a grinder, grind to a lightly coarse-fine mixture. 

Put the ghee in the pan and sauté raisins and nuts. Grind the sugar to a fine powder and add to the roasted semolina mixture and the ghee with the raisin and nuts. Using a spoon mix it. Add the milk to help bind the mixture.  

When the mixture is cool enough to handle, using your hands make balls and tighten it. It will harden over time. Keep these semolina sweets or ladoos in an airtight container and enjoy.

  2. I see semolina all the time at a local shop, but have purchased it to try making anything. Maybe this will be the one to try.
