Semolina Sweets

Semolina Sweets rava ladoo
I make these sweets using semolina also known as durum wheat for evening snacks. It is delicious, easy and quick to make.

2 cups semolina or rava
3/4 cup fine sugar
1 to 2 tbsp ghee
1/3 cup warmed milk
1/4 cup ground or chopped almonds or cashews
1/4 cup raisins
1/4 cup grated fresh coconut
2 cardamom seeds finely ground
Semolina Sweets rava ladoo
Heat a pan and dry roast the semolina until the raw smell is gone, and the colour changes to lightly golden brown. Remove from heat and put it in to a large bowl and let it cool.

Put the ghee in the pan and sauté the fresh coconut, nuts, and raisins. Add the sautéed ingredients, sugar, and cardamom to the roasted semolina and mix with a wooden spoon. Add the milk and mix it.

While the mixture is warm, using your hands make balls and tighten it. Leave it aside for about 1/2 hour to 1 hour for it harden. These semolina sweets or ladoos can be kept in an airtight container and enjoyed.
