Funnel Cake

This funnel cake is the perfect carnival food to enjoy even when it is cold outside. It tastes delicious with different combination of fruit toppings you like. 

1 cup flour
1 1/2 tbsp sugar
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 cup milk
1 egg
grated zest of an orange
oil to fry
berries or apples sautéed with cinnamon and sugar
lightly sweetened whipped cream or ice cream to serve
icing sugar

Mix the flour, baking powder, sugar and salt and leave aside. Mix the liquids milk, vanilla, egg and orange zest together and add it gradually to the flour mixture by whisking. Let the mixture rest for at least 30 minutes.

In a pan, heat 2 inches of oil such as vegetable or any other oil without flavour to 350F. The oil is ready if it sizzles when a pinch of flour is sprinkled.

Pour 3 tbsp batter into the funnel while covering the bottom of the funnel with a finger. In a spiral motion swirl the batter over the oil and fry for about 2 minutes until golden, then using tongs flip over and fry the other side for another 1 to 2 minutes. Remove and leave it on a paper towel. Dust with icing sugar and continue cooking the rest. Serve with warm compote or berries and ice cream or whipped cream.
